avocado pasta salad recipe

 












Ingredients:


8 oz pasta (penne, rotini, or bowtie)


1 ripe avocado


½ cup cherry tomatoes, halved


¼ cup red onion, thinly sliced


½ cup cucumber, diced


¼ cup corn (optional)


¼ cup black beans (optional)


¼ cup feta cheese (or cotija cheese)


¼ cup fresh cilantro or basil, chopped



For the Dressing:


1 ripe avocado


2 tbsp olive oil


2 tbsp Greek yogurt or sour cream (optional for creaminess)


Juice of 1 lime


1 garlic clove, minced


½ tsp salt


½ tsp black pepper


½ tsp cumin (optional)


1 tbsp honey or maple syrup (for a slight sweetness)



Instructions:


1. Cook the pasta according to package instructions. Drain and let cool.



2. Make the dressing: Blend the avocado, olive oil, Greek yogurt, lime juice, garlic, salt, pepper, cumin, and honey until smooth. If too thick, add a little water to thin it out.



3. Assemble the salad: In a large bowl, combine the pasta, tomatoes, onion, cucumber, corn, black beans, and feta cheese.



4. Mix in the dressing, tossing everything gently to coat.



5. Chill for 15-30 minutes before serving for best flavor.
