broccoli apple salad recipe

 










Ingredients:


4 cups fresh broccoli florets (chopped small)


1 large apple (Honeycrisp, Fuji, or Gala), diced


½ cup shredded carrots


¼ cup red onion, finely chopped


½ cup dried cranberries or raisins


¼ cup sunflower seeds or chopped pecans


½ cup shredded cheddar cheese (optional)



For the Dressing:


½ cup Greek yogurt (or mayonnaise for a richer taste)


2 tbsp honey or maple syrup


1 tbsp apple cider vinegar


1 tsp Dijon mustard (optional for tang)


½ tsp salt


½ tsp black pepper



Instructions:


1. Prepare the dressing: In a small bowl, whisk together Greek yogurt, honey, apple cider vinegar, Dijon mustard, salt, and pepper.



2. Assemble the salad: In a large bowl, combine broccoli, apple, carrots, red onion, cranberries, sunflower seeds, and cheddar cheese.



3. Toss with dressing until everything is well coated.



4. Chill for 15-30 minutes before serving to enhance flavors.
