Ingredients:
1 ½ cups all-purpose flour
1 cup ground pistachios
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup unsalted butter, softened
¾ cup sugar
2 eggs
1 tsp vanilla extract
½ cup Greek yogurt or sour cream
½ cup crushed pineapple (drained)
¼ cup pineapple juice (from the can)
Instructions:
1. Preheat oven to 350°F (175°C). Grease a cake pan.
2. Whisk together flour, ground pistachios, baking powder, baking soda, and salt.
3. In a separate bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla.
4. Mix in yogurt, crushed pineapple, and pineapple juice.
5. Gradually fold in the dry ingredients.
6. Pour into the cake pan and bake for 30-35 minutes or until a toothpick comes out clean.
7. Let cool and top with a cream cheese or pineapple glaze.
