Here's a fun and delicious recipe for Cheesesteak Egg Rolls – crispy, savory, and perfect for a snack or appetizer!

Ingredients:

  • 1 lb ribeye steak (or sirloin), thinly sliced
  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced (optional)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup provolone cheese, shredded (or a mix of provolone and American cheese)
  • 10-12 egg roll wrappers
  • 1 egg (for sealing the egg rolls)
  • Vegetable oil for frying

Instructions:

1. Prepare the filling:

  • Heat the olive oil in a large skillet or frying pan over medium-high heat.
  • Add the thinly sliced steak, season with salt and pepper, and cook for about 2-3 minutes until browned but not overcooked. Remove the steak from the pan and set aside.
  • In the same pan, add the onion and bell pepper (if using). Sauté for about 3-4 minutes, or until softened. Add the garlic and cook for another minute.
  • Return the cooked steak to the pan with the onions and peppers, mix well, and remove from heat. Let the mixture cool slightly.
  • Stir in the shredded cheese until it's well combined with the steak and vegetables.

2. Assemble the egg rolls:

  • Place an egg roll wrapper on a flat surface, with one corner facing you (like a diamond shape).
  • Spoon a generous amount of the cheesesteak filling into the center of the wrapper.
  • Brush the edges of the wrapper with a little beaten egg to help seal it.
  • Fold the bottom corner over the filling, then fold in the sides, and roll tightly to close the egg roll.
  • Repeat with the remaining filling and wrappers.

3. Fry the egg rolls:

  • Heat about 2-3 inches of vegetable oil in a large skillet or deep fryer over medium-high heat (around 350°F or 175°C).
  • Once the oil is hot, carefully add the egg rolls in batches, frying for 3-4 minutes per side until golden brown and crispy.
  • Use tongs to remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil.

4. Serve:

  • Let the egg rolls cool for a couple of minutes before serving. They can be enjoyed on their own or with a dipping sauce like ketchup, ranch, or a cheese sauce!
