Here’s a delicious recipe for Cheesy Mashed Potato Puffs, perfect as a snack, appetizer, or side dish.

Ingredients:

  • 2 cups mashed potatoes (leftover or freshly made)
  • 2 large eggs
  • ½ cup shredded cheddar cheese (or any cheese of choice)
  • ¼ cup grated Parmesan cheese
  • ¼ cup milk (optional, if potatoes are too thick)
  • 2 tablespoons butter, melted
  • 2 tablespoons chopped green onions or chives
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt and black pepper to taste
  • ½ teaspoon baking powder (for extra fluffiness)
  • ½ cup breadcrumbs (optional, for a crispy texture)

Instructions:

  1. Preheat the oven:

    • Preheat your oven to 200°C (400°F).
    • Grease a muffin tin or line it with paper liners.
  2. Prepare the mixture:

    • In a large bowl, combine the mashed potatoes, eggs, shredded cheddar cheese, Parmesan, melted butter, green onions, garlic powder, onion powder, salt, and black pepper.
    • If the mixture is too thick, add a little milk to loosen it up.
    • Stir in the baking powder to help the puffs rise slightly.
  3. Fill the muffin tin:

    • Spoon the potato mixture into the muffin cups, filling them about ¾ full.
    • If desired, sprinkle some breadcrumbs and extra cheese on top for a crispy, cheesy finish.
  4. Bake:

    • Bake for 20-25 minutes, or until the tops are golden brown and slightly crispy.
    • Remove from the oven and let them cool for a few minutes before removing from the tin.
  5. Serve:

    • Serve warm, garnished with extra chives or a dollop of sour cream.
