Chicken Alfredo Lasagna Rolls Recipe

 











Ingredients:


12 lasagna noodles


2 cups cooked chicken (shredded or diced)


1 1/2 cups ricotta cheese


2 cups shredded mozzarella cheese


1/2 cup grated Parmesan cheese


2 tablespoons fresh parsley (chopped)


1 teaspoon garlic powder


1/2 teaspoon onion powder


Salt and pepper to taste


3 cups Alfredo sauce (store-bought or homemade)


1/2 cup spinach (optional, finely chopped)

For the Homemade Alfredo Sauce (optional):


1/2 cup butter


2 cups heavy cream


2 teaspoons minced garlic


1 cup grated Parmesan cheese


Salt and pepper to taste

Instructions:


1. Prepare the lasagna noodles:


Cook the lasagna noodles according to package directions, drain, and set aside on a parchment-lined tray or large plate to prevent sticking.



2. Make the Alfredo sauce (if homemade):


In a saucepan, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.


Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese and cook until the sauce thickens, about 3-4 minutes. Season with salt and pepper to taste. Remove from heat.



3. Prepare the filling:


In a large bowl, combine the cooked chicken, ricotta cheese, mozzarella cheese, Parmesan cheese, parsley, garlic powder, onion powder, and spinach (if using). Season with salt and pepper.



4. Assemble the lasagna rolls:


Preheat the oven to 375°F (190°C). Spread 1/2 cup of Alfredo sauce evenly on the bottom of a baking dish.


Lay out a lasagna noodle, spread a generous amount of the chicken mixture along the noodle, and roll it up tightly.


Place the rolled-up noodle seam-side down in the baking dish. Repeat with the remaining noodles and filling.



5. Top with Alfredo sauce:


Pour the remaining Alfredo sauce over the rolled lasagna noodles, then sprinkle with additional mozzarella and Parmesan cheese.



6. Bake:


Cover the dish with foil and bake for 20-25 minutes, until bubbly and heated through.


Remove the foil and bake for an additional 5-10 minutes until the cheese is golden and slightly crispy.



7. Serve:


Let the lasagna rolls rest for a few minutes before serving. Garnish with extra parsley if desired.

Tips:


You can make this dish ahead of time! Assemble everything and refrigerate the lasagna rolls before baking, then just pop them in the oven when you're ready to eat.


For a twist, add sautéed mushrooms, roasted red peppers, or other vegetables to the filling.
