Ingredients:

  • 1 medium head of broccoli, cut into florets
  • 2 cups kale, chopped (stems removed)
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream (or coconut cream for a dairy-free option)
  • 1/2 cup grated Parmesan cheese (optional for extra creaminess, or use a dairy-free substitute)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes (optional for a little heat)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 cup breadcrumbs (optional for topping)

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C).

  2. Prepare the veggies:

    • In a large bowl, toss the broccoli florets and chopped kale with olive oil, garlic powder, onion powder, crushed red pepper flakes (if using), salt, and pepper.
    • Spread the veggies evenly in a baking dish (9x13-inch works well).
  3. Prepare the cream sauce:

    • In a small saucepan over medium heat, heat the heavy cream until warm (but not boiling).
    • Stir in the grated Parmesan cheese (if using), and cook until melted and creamy. Taste and adjust the seasoning if needed.
  4. Assemble the dish:

    • Pour the creamy sauce evenly over the broccoli, kale, and tomatoes.
    • Gently toss the veggies to coat them in the sauce.
  5. Bake:

    • Cover the baking dish with foil and bake for 20-25 minutes, or until the broccoli and kale are tender.
    • After 20-25 minutes, remove the foil and sprinkle the breadcrumbs on top (if using). Return the dish to the oven and bake for another 5-10 minutes until the top is golden and crispy.
  6. Serve:

    • Remove from the oven and let it cool for a few minutes before serving. You can garnish with extra Parmesan or fresh herbs if desired.
