Crispy Chicken with Creamy Pasta
Ingredients:
For the Crispy Chicken:
- 2 large chicken breasts (boneless, skinless)
- ½ cup all-purpose flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 1 egg
- ½ cup breadcrumbs (or panko for extra crispiness)
- ¼ cup grated Parmesan cheese
- 2 tablespoons oil (for frying)
For the Creamy Pasta:
- 250g pasta (penne, fettuccine, or linguine)
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup milk
- ½ cup grated Parmesan cheese
- ½ teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes (optional)
- Salt & pepper to taste
- ¼ cup chopped parsley (for garnish)
Instructions:
1. Cook the Pasta
- Boil pasta in salted water until al dente. Drain and set aside.
2. Prepare the Crispy Chicken
- Slice chicken breasts in half lengthwise to create thin cutlets.
- In one bowl, mix flour, salt, black pepper, and paprika.
- In a second bowl, beat the egg.
- In a third bowl, mix breadcrumbs and Parmesan cheese.
- Coat each chicken piece in flour, dip in egg, then coat in breadcrumb mixture.
- Heat oil in a pan and cook chicken for 3-4 minutes per side until golden and crispy. Set aside.
3. Make the Creamy Pasta Sauce
- In the same pan, melt butter and sauté garlic for 1 minute.
- Pour in heavy cream and milk, stirring to combine.
- Add Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer until thickened.
- Toss in cooked pasta and mix well.
4. Serve & Enjoy
- Slice crispy chicken and place on top of the creamy pasta.
- Garnish with chopped parsley and extra Parmesan.
