Here’s a simple recipe for delicious orange cupcakes:
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp orange zest (from about 1 orange)
- 1/2 cup fresh orange juice
- 1/2 cup sour cream or whole milk
For the Frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tbsp orange juice
- 1 tbsp orange zest
Directions:
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat the butter and sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and orange zest.
- Gradually add the dry ingredients, alternating with the orange juice and sour cream (or milk), beginning and ending with the dry ingredients. Mix until just combined.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
- While the cupcakes are cooling, prepare the frosting: Beat the softened butter until creamy, then gradually add the powdered sugar, orange juice, and zest. Continue to beat until smooth and fluffy.
- Once the cupcakes are completely cooled, frost with the orange frosting.
Enjoy your fresh, zesty, and delicious orange cupcakes!
