Ingredients:
For the Doughnuts:
2 1/4 teaspoons active dry yeast (1 packet)
1/2 cup warm milk (110°F/43°C)
1/4 cup sugar
2 large eggs
1/2 cup melted butter
1/2 teaspoon salt
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour (plus extra for dusting)
Vegetable oil (for frying)
For the Glaze (Optional):
1 1/2 cups powdered sugar
2 tablespoons milk (or more for desired consistency)
1/2 teaspoon vanilla extract
---
Instructions:
1. Activate the yeast:
In a small bowl, combine the warm milk and sugar. Sprinkle the yeast on top and stir gently. Let it sit for 5-10 minutes until it becomes foamy.
2. Prepare the dough:
In a large mixing bowl, combine the yeast mixture, eggs, melted butter, salt, and vanilla extract. Stir to combine.
Gradually add the flour, one cup at a time, mixing after each addition until a soft dough forms.
Knead the dough on a floured surface for 5-7 minutes until it’s smooth and elastic. You can also use a stand mixer with a dough hook.
3. Let the dough rise:
Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1-1.5 hours, or until it has doubled in size.
4. Shape the doughnuts:
Punch the dough down to release the air. Roll it out on a floured surface to about 1/2-inch thickness.
Use a round cutter (about 3 inches in diameter) to cut out circles, and use a smaller cutter (like a shot glass) to cut out the holes in the center.
Place the doughnut shapes on a floured baking sheet and let them rise for another 30-45 minutes, until puffed up.
5. Fry the doughnuts:
Heat about 2-3 inches of vegetable oil in a large pot over medium-high heat to 350°F (175°C).
Carefully drop the doughnuts into the hot oil, a few at a time, frying for 1-2 minutes on each side until golden brown.
Use a slotted spoon to remove the doughnuts and place them on a paper towel-lined plate to drain excess oil.
6. Make the glaze (optional):
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk if needed to reach a smooth dipping consistency.
7. Glaze the doughnuts:
While the doughnuts are still warm, dip them into the glaze or drizzle the glaze over the top. Let the glaze set for a few minutes before serving.

Tips:
Flavor variations: Add cinnamon, nutmeg, or other spices to the dough for a different flavor. You can also mix in chocolate chips or fruit zest.
Toppings: Try rolling your doughnuts in cinnamon sugar or powdered sugar, or top them with sprinkles or chopped nuts.
Enjoy your homemade doughnuts fresh and warm!
