Ingredients:

  • 1 lb steak (ribeye, sirloin, or your choice), cut into bite-sized cubes
  • 1 lb baby potatoes, halved or quartered
  • 4 tbsp butter (divided)
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried thyme (optional)
  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the Potatoes:

    • Preheat your air fryer to 400°F (200°C).
    • Toss the halved or quartered baby potatoes with 1 tablespoon of olive oil, salt, pepper, and any additional seasoning (like thyme if you’re using it).
    • Place them in the air fryer basket in a single layer and cook for about 15-20 minutes, shaking halfway through until golden and crispy.
  2. Prepare the Steak Bites:

    • While the potatoes are cooking, season the steak cubes with salt and pepper.
    • After the potatoes are done, remove them from the air fryer and set them aside.
    • In the same air fryer basket, add the steak cubes and cook at 400°F for about 8-10 minutes, shaking halfway through. The steak should be crispy on the outside but tender inside.
  3. Make Garlic Butter:

    • While the steak bites are cooking, melt 3 tablespoons of butter in a skillet over medium heat.
    • Add minced garlic and cook for 1-2 minutes until fragrant but not burnt.
    • Add the cooked potatoes to the skillet and toss them in the garlic butter.
  4. Combine and Serve:

    • Once the steak bites are done, add them to the skillet with the garlic butter-coated potatoes.
    • Add the remaining 1 tablespoon of butter to the pan and toss everything together until the butter melts and everything is well coated.
    • Garnish with fresh parsley if desired, and serve immediately!
