Here's a Great Traditional Cheesecake recipe that’s creamy, rich, and perfect for any occasion.

Ingredients:

For the crust:

  • 200g (about 2 cups) crushed graham crackers or digestive biscuits
  • 100g (7 tbsp) unsalted butter, melted
  • 2 tbsp granulated sugar
  • ½ tsp ground cinnamon (optional)

For the filling:

  • 900g (32 oz) cream cheese, softened
  • 200g (1 cup) granulated sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 200g (¾ cup) sour cream or Greek yogurt
  • 1 tbsp lemon juice (optional, for a subtle tang)
  • 2 tbsp all-purpose flour (helps with structure)

For the topping (optional):

  • 200g (¾ cup) sour cream
  • 2 tbsp powdered sugar
  • ½ tsp vanilla extract

Instructions:

  1. Prepare the crust:

    • Preheat the oven to 175°C (350°F).
    • In a bowl, mix the crushed graham crackers, melted butter, sugar, and cinnamon (if using).
    • Press the mixture firmly into the bottom of a 9-inch (23 cm) springform pan.
    • Bake for 10 minutes, then remove from the oven and let it cool.
  2. Make the filling:

    • In a large bowl, beat the softened cream cheese and sugar until smooth and creamy (about 2-3 minutes).
    • Add the vanilla extract and lemon juice, mixing well.
    • Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
    • Fold in the sour cream and flour gently, ensuring not to overmix.
  3. Bake the cheesecake:

    • Pour the filling over the cooled crust, smoothing the top with a spatula.
    • Place the pan in a larger roasting pan and pour hot water into the roasting pan, filling it about halfway up the sides of the cheesecake pan (water bath method for even baking).
    • Bake at 160°C (325°F) for 60-70 minutes, or until the edges are set, but the center still jiggles slightly.
  4. Cooling:

    • Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour to prevent cracking.
    • Remove from the oven and refrigerate for at least 4 hours, preferably overnight.
  5. Prepare the topping (optional):

    • Mix sour cream, powdered sugar, and vanilla extract. Spread evenly over the chilled cheesecake.
  6. Serve:

    • Remove the cheesecake from the springform pan carefully.
    • Slice and serve plain or with fruit toppings like fresh berries or caramel sauce.
