Ingredients:

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts (or thighs)

  • 4 cloves garlic, minced

  • 1 tablespoon rice vinegar (or apple cider vinegar)

  • 1 tablespoon cornstarch (optional, for thickening)

Instructions:

  1. Cook the chicken:

    • Heat 1 tablespoon of olive oil over medium-high heat in a large pot or deep skillet. Season the chicken breasts with salt and pepper on both sides.
    • Add the chicken to the pot and cook for 6-7 minutes per side, until golden brown and cooked through. Remove the chicken from the pot and set it aside. Once cooled slightly, slice it into thin strips or cubes.
  2. Make the sauce:

    • In the same pot, add the remaining tablespoon of olive oil. Add the minced garlic and cook for about 30 seconds until fragrant (be careful not to burn it).
    • Stir in the honey, soy sauce, rice vinegar, and red pepper flakes (if using). Bring to a simmer and cook for about 2-3 minutes, stirring occasionally.
  3. Cook the noodles:

    • Add the chicken broth and uncooked pasta to the pot, stirring to combine. Bring everything to a boil.
    • Reduce the heat to low, cover, and simmer for 10-12 minutes (or according to your pasta package directions), stirring occasionally, until the noodles are tender and the liquid is mostly absorbed.
  4. Thicken the sauce (optional):

    • If you want a thicker sauce, mix the cornstarch with a little water to make a slurry, and stir it into the pot. Let it cook for another 1-2 minutes until thickened.
  5. Combine:

    • Return the cooked chicken to the pot and toss everything together to coat the chicken and noodles in the delicious honey garlic sauce.
  6. Serve:

    • Garnish with fresh parsley or sliced green onions, and serve hot.
