Crispy French Fries with Vinegar Soak
Ingredients:
4 large Russet potatoes (best for fries)
2 tbsp white vinegar (or apple cider vinegar)
6 cups cold water
1-2 tbsp salt
Oil for frying (peanut or vegetable oil)
Optional: seasoning (garlic powder, paprika, black pepper)
Instructions:
1. Cut the Potatoes:
Peel (optional) and cut potatoes into thin strips (about 1/4 inch thick).
2. Soak in Vinegar Water:
In a large bowl, mix 6 cups of cold water with 2 tbsp vinegar.
Add the potato strips and let them soak for 30 minutes to 2 hours (longer soak = crispier fries).
Drain and pat them completely dry with paper towels.
3. First Fry (Blanching):
Heat oil to 325°F (163°C) in a deep fryer or heavy pan.
Fry potatoes in small batches for about 3-4 minutes, until slightly golden but still soft.
Remove and drain on a paper towel. Let them cool for at least 10 minutes.
4. Second Fry (Crisp Perfection!):
Increase oil temperature to 375°F (190°C).
Fry the potatoes again for 2-3 minutes until golden brown and crispy.
Remove, drain, and immediately sprinkle with salt and seasonings.
5. Serve Hot:
Enjoy your super crispy fries with ketchup, garlic aioli, or malt vinegar!
