Soft Cinnamon Apple Fritters with Vanilla Glaze

Soft cinnamon apple fritters with a vanilla glaze sound like the perfect treat! Here’s a delicious recipe for them:

Ingredients:

For the Fritters:

  • 2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk (or buttermilk for extra fluffiness)
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter
  • Vegetable oil for frying (enough for deep frying)

For the Vanilla Glaze:

  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2-3 tablespoons milk (adjust to your desired glaze consistency)

Instructions:

For the Fritters:

  1. Prepare the apples: Peel, core, and dice the apples into small chunks. Set them aside.

  2. Make the batter: In a large bowl, combine the flour, sugar, baking powder, cinnamon, and salt. In a separate bowl, whisk together the eggs, milk, vanilla extract, and melted butter. Gradually pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be thick.

  3. Add the apples: Gently fold the diced apples into the batter, ensuring they are evenly distributed.

  4. Heat the oil: Heat about 2-3 inches of vegetable oil in a deep pan or fryer to 350°F (175°C). You can test the temperature by dropping a small spoonful of batter into the oil; it should sizzle and float to the top.

  5. Fry the fritters: Carefully drop spoonfuls of the batter into the hot oil, a few at a time. Fry for about 2-3 minutes on each side, until golden brown and cooked through. Use a slotted spoon to remove the fritters and place them on a paper towel-lined plate to drain excess oil.

  6. Make the vanilla glaze: In a small bowl, whisk together the powdered sugar, vanilla extract, and 2 tablespoons of milk. Adjust the milk until you achieve a smooth, drizzle-able consistency.

  7. Glaze the fritters: Once the fritters have cooled slightly, drizzle the vanilla glaze over them.

  8. Serve: Enjoy your warm, soft cinnamon apple fritters with a sweet vanilla glaze!

These fritters are perfect for breakfast, dessert, or a special treat. The cinnamon and apples are a cozy combo, and the vanilla glaze adds a sweet finishing touch.
