Sugar-Free Vanilla Pudding (A Sweet and Creamy Delight)
This homemade vanilla pudding is smooth, rich, and creamy—without any added sugar!
Ingredients:
2 cups heavy cream (or 1 cup heavy cream + 1 cup unsweetened almond milk)
1/3 cup sugar-free sweetener (like allulose or monk fruit blend)
3 large egg yolks
1 tablespoon butter
2 teaspoons vanilla extract
1/4 teaspoon salt
1/2 teaspoon xanthan gum (for thickening)
Instructions:
1. Heat the Cream:
In a saucepan over medium heat, warm the heavy cream and sweetener until it’s hot but not boiling.
2. Temper the Eggs:
In a separate bowl, whisk the egg yolks.
Slowly add a few tablespoons of the warm cream mixture to the yolks, whisking constantly.
Gradually pour the yolk mixture back into the saucepan, stirring continuously.
3. Thicken the Pudding:
Reduce heat to low and cook, stirring frequently, until the mixture thickens (about 5-7 minutes).
Stir in butter, vanilla extract, and salt.
Sprinkle in xanthan gum and whisk until smooth.
4. Chill & Serve:
Pour into serving dishes and cover with plastic wrap (press it onto the surface to prevent a skin from forming).
Chill for at least 2 hours before serving.
