Apple Cinnamon Roll Casserole

Ingredients


1 can (12-13 oz) refrigerated cinnamon rolls (or sugar-free/keto version below)


2 apples, peeled, cored, and chopped


2 tbsp melted butter


1 tsp cinnamon


¼ cup chopped pecans or walnuts (optional)


1 tbsp sugar-free sweetener (like erythritol or monk fruit)



For the Glaze:


The icing from the cinnamon roll can (or homemade sugar-free glaze below)



Instructions


1. Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish.



2. Prepare the cinnamon rolls: Cut the cinnamon rolls into quarters and spread them evenly in the baking dish.



3. Prepare the apples: In a bowl, mix chopped apples with melted butter, cinnamon, and sweetener. Stir in pecans if using.



4. Assemble: Sprinkle the apple mixture over the cinnamon rolls. Lightly mix to distribute.



5. Bake for 30-35 minutes or until golden brown and cooked through.



6. Glaze: Drizzle the icing over the warm casserole before serving.

Sugar-Free/Keto Cinnamon Roll Dough (Alternative)


If avoiding store-bought dough, try this:


1 cup almond flour


2 tbsp coconut flour


1 tsp baking powder


1 tbsp melted butter


1 egg


1 tbsp sugar-free sweetener


½ tsp cinnamon



1. Mix all ingredients, roll into small dough balls, and flatten slightly.



2. Use them in place of the store-bought cinnamon rolls in the recipe above.




Sugar-Free Glaze


2 tbsp cream cheese, softened


2 tbsp heavy cream


1 tbsp powdered sugar-free sweetener


½ tsp vanilla extract



Whisk together until smooth and drizzle over the casserole.
