Baked Cottage Cheese Eggs
Ingredients:
4 large eggs
½ cup cottage cheese
¼ cup shredded cheese (cheddar, mozzarella, or feta)
2 tbsp heavy cream or milk (optional for creamier texture)
½ tsp salt
¼ tsp black pepper
¼ tsp garlic powder (optional)
¼ tsp smoked paprika (optional)
2 tbsp chopped fresh herbs (chives, parsley, or basil)
½ cup diced vegetables (bell peppers, spinach, mushrooms, or tomatoes)
Instructions:
1. Preheat oven to 375°F (190°C). Grease a small baking dish or oven-safe ramekins.
2. Mix ingredients: In a bowl, whisk eggs, then stir in cottage cheese, shredded cheese, cream/milk, salt, pepper, and spices.
3. Add veggies: Fold in your choice of diced vegetables and fresh herbs.
4. Bake: Pour mixture into the baking dish or ramekins. Bake for 20-25 minutes or until eggs are set and slightly golden on top.
5. Cool & serve: Let cool for a few minutes before serving.
