Here's a simple and delicious recipe for baked pork chops with potatoes:
Ingredients:
- 4 bone-in pork chops
- 4 medium potatoes, peeled and sliced into 1/4-inch thick rounds
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme (or rosemary, if preferred)
- Salt and pepper, to taste
- 1/2 cup chicken broth (or water)
- 1 tablespoon butter (optional)
Instructions:
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a large skillet over medium heat. Season the pork chops with salt, pepper, garlic powder, onion powder, and thyme (or rosemary).
- Sear the pork chops in the skillet for 2-3 minutes on each side, until lightly browned. Remove them from the skillet and set aside.
- In the same skillet, add the sliced potatoes, season with a little salt, and cook for 5-7 minutes, just until they start to soften.
- In a baking dish, arrange the potatoes in an even layer. Pour chicken broth over the potatoes, and place the pork chops on top of the potatoes.
