Baked Ranch Parmesan Chicken (Sugar-Free)
Ingredients:
2 large chicken breasts (or 4 boneless, skinless thighs)
½ cup mayonnaise (or Greek yogurt for a lighter option)
½ cup grated Parmesan cheese
1 tbsp ranch seasoning (sugar-free, homemade or store-bought)
½ tsp garlic powder
½ tsp onion powder
½ tsp paprika (optional, for extra flavor)
½ tsp black pepper
¼ cup crushed pork rinds (or almond flour for a low-carb crust, optional)
Instructions:
1. Preheat oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.
2. Prepare the coating: In a bowl, mix mayonnaise (or Greek yogurt), Parmesan cheese, ranch seasoning, garlic powder, onion powder, paprika, and black pepper.
3. Coat the chicken: Spread the mixture evenly over each chicken breast. If using, sprinkle crushed pork rinds or almond flour on top for extra crunch.
4. Bake: Place the chicken in the baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the top is golden brown.
5. Serve: Let it rest for a few minutes before serving. Enjoy with a side of roasted veggies, a fresh salad, or cauliflower mash!
