Baked Shrimp in Lemon Butter Sauce (Low-Carb & Delicious!)
Ingredients:
1 lb large shrimp, peeled and deveined
3 tbsp unsalted butter, melted
3 cloves garlic, minced
Juice of 1 lemon (about 2 tbsp)
1 tsp lemon zest
1 tsp paprika
½ tsp salt
½ tsp black pepper
½ tsp red pepper flakes (optional, for heat)
1 tbsp fresh parsley, chopped
1 tbsp grated Parmesan (optional, for extra richness)
Instructions:
1. Preheat Oven:
Set oven to 375°F (190°C).
2. Prepare the Shrimp:
Place shrimp in a single layer in a baking dish.
3. Make the Lemon Butter Sauce:
In a small bowl, mix melted butter, garlic, lemon juice, lemon zest, paprika, salt, and black pepper.
4. Bake:
Pour the sauce over the shrimp, tossing gently to coat.
Sprinkle with red pepper flakes (if using).
Bake for 10-12 minutes, or until shrimp are pink and opaque.
5. Garnish & Serve:
Sprinkle with fresh parsley and Parmesan (if using).
Serve with roasted cauliflower, zucchini noodles, or a fresh salad for a low-carb meal.
