Ingredients
For the Beef & Gravy:
1 ½ lbs beef stew meat or thinly sliced sirloin
2 tbsp butter or olive oil
1 small onion, diced
2 cloves garlic, minced
2 cups beef broth
1 tbsp Worcestershire sauce
1 tsp soy sauce (or coconut aminos for a lower-sodium option)
1 tsp black pepper
½ tsp salt (adjust to taste)
½ tsp smoked paprika (optional)
1 tsp dried thyme (or ½ tsp fresh)
1 tbsp cornstarch (or 2 tsp xanthan gum for keto) + 2 tbsp water (for thickening)
For the Mashed Potatoes:
2 lbs potatoes (Russet or Yukon Gold), peeled & diced
4 tbsp butter
½ cup heavy cream or milk
Salt & pepper to taste

Instructions
Make the Mashed Potatoes:
1. Boil potatoes in salted water for about 15 minutes, until fork-tender.
2. Drain and mash with butter, cream, salt, and pepper. Set aside.
Make the Beef & Gravy:
1. Heat butter in a large skillet over medium-high heat. Add beef and sear until browned on all sides. Remove and set aside.
2. In the same skillet, sauté onions until soft, then add garlic for 30 seconds.
3. Pour in beef broth, Worcestershire sauce, soy sauce, black pepper, salt, paprika, and thyme. Stir well.
4. Return beef to the skillet. Cover and simmer for 30-45 minutes until tender.
5. Mix cornstarch with water, stir into the gravy, and cook until thickened (2-3 minutes).
Assemble:
Spoon mashed potatoes onto plates and top with the beef and gravy.
Garnish with fresh parsley if desired.
