Ingredients
4 cups fresh broccoli florets, chopped
½ cup red onion, finely chopped
½ cup cheddar cheese, shredded (or cubed)
⅓ cup sunflower seeds (or chopped almonds)
½ cup crispy bacon, crumbled
¼ cup dried cranberries (sugar-free or unsweetened)
Dressing (Sugar-Free & Creamy)
½ cup mayonnaise (or Greek yogurt for a lighter version)
2 tbsp apple cider vinegar (or lemon juice)
1 tbsp Dijon mustard
½ tsp garlic powder
Salt & pepper to taste
Instructions
1. In a large bowl, combine broccoli, red onion, cheese, sunflower seeds, bacon, and cranberries.
2. In a small bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, salt, and pepper.
3. Pour the dressing over the salad and toss well to coat.
4. Let it chill for at least 30 minutes before serving to enhance the flavors.
