Sugar-Free Black Folks' Sweet Potato Pie
Ingredients
2 cups mashed sweet potatoes (about 2 large sweet potatoes)
½ cup unsalted butter, melted
½ cup monk fruit sweetener (or ⅓ cup erythritol + ¼ tsp stevia)
½ cup heavy cream (or evaporated milk)
2 large eggs
1 tsp vanilla extract
1 tsp cinnamon
½ tsp nutmeg
½ tsp ginger
¼ tsp salt
1 unbaked pie crust (homemade or store-bought)
Instructions
1. Prep the Sweet Potatoes:
Preheat oven to 375°F (190°C).
Pierce sweet potatoes with a fork and bake for 50-60 minutes until soft. Let cool, then peel and mash.
2. Make the Filling:
In a large bowl, mix mashed sweet potatoes, melted butter, and sweetener until smooth.
Add eggs, heavy cream, vanilla, and spices. Mix until fully combined.
3. Assemble the Pie:
Pour filling into unbaked pie crust and smooth the top.
4. Bake:
Bake for 50-55 minutes or until the center is set (a knife should come out clean).
Let cool for at least 2 hours before serving.
Serving Suggestion
Top with sugar-free whipped cream or a drizzle of sugar-free maple syrup.
