1. Tricolored Pasta Salad (Light & Fresh)
Ingredients:
1 box tricolored pasta, cooked and cooled
1 cup cherry tomatoes, halved
½ cup cucumbers, diced
¼ cup red onion, finely chopped
½ cup feta cheese (or mozzarella balls)
¼ cup black olives, sliced
2 tbsp olive oil
1 tbsp balsamic vinegar or lemon juice
1 tsp Italian seasoning
Salt & pepper to taste
Instructions:
1. Cook pasta according to package instructions, then rinse with cold water.
2. In a large bowl, combine pasta, veggies, cheese, and olives.
3. Drizzle with olive oil, balsamic vinegar, and seasonings. Toss well and serve chilled.
