Cheesecake Fruit Salad (Sugar-Free)
Ingredients:
8 oz cream cheese, softened
1 cup Greek yogurt (plain, unsweetened)
1 tsp vanilla extract
2 tbsp sugar-free sweetener (monk fruit, erythritol, or stevia)
½ cup heavy cream (optional for extra creaminess)
2 cups strawberries, sliced
1 cup blueberries
1 cup raspberries
1 cup green grapes, halved
1 cup pineapple chunks (fresh, not canned)
¼ cup chopped pecans or walnuts (optional)
Instructions:
1. Make the cheesecake mixture: In a large bowl, beat the cream cheese until smooth. Add Greek yogurt, vanilla extract, and sweetener. If using, whip in heavy cream until light and fluffy.
2. Prepare the fruit: Wash and chop all fruit as needed.
3. Combine: Gently fold the fruit into the cheesecake mixture until evenly coated.
4. Chill: Let it sit in the fridge for at least 30 minutes before serving.
5. Serve & enjoy! Garnish with chopped nuts if desired.
