Cheesy Bacon Potatoes are a crowd-pleasing, indulgent side dish that’s packed with flavor. Here’s an easy recipe to make them:
Ingredients:
- 4 medium-sized russet potatoes, peeled and cubed
- 6 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ¼ cup green onions, chopped (optional)
- 2 tbsp butter
- Salt and pepper to taste
Instructions:
- Cook Potatoes: Boil the cubed potatoes in salted water for about 10-12 minutes until fork-tender. Drain well.
- Cook Bacon: While the potatoes cook, fry the bacon until crispy. Remove from the pan, crumble it, and set aside.
- Mix Together: In a large bowl, mash the potatoes with butter, sour cream, salt, and pepper until creamy.
- Add Cheese & Bacon: Stir in ¾ cup of shredded cheese and most of the crumbled bacon (reserve some for topping).
- Bake: Preheat the oven to 375°F (190°C). Transfer the mashed potato mixture to a greased baking dish. Top with the remaining cheese and bacon. Bake for about 15 minutes, or until the cheese is melted and bubbly.
- Garnish & Serve: Top with chopped green onions and serve hot!
