Cheesy Mashed Potato Puffs


Ingredients:


2 cups mashed potatoes (leftover or freshly made)


1 cup shredded cheese (cheddar, mozzarella, or a mix)


2 eggs, beaten


¼ cup grated Parmesan cheese


¼ cup sour cream or Greek yogurt


¼ cup chopped green onions or chives


½ tsp garlic powder


½ tsp black pepper


½ tsp salt


Optional: ½ cup cooked crumbled bacon for extra flavor



Instructions:


1. Preheat oven to 400°F (200°C). Grease a muffin tin or use silicone liners.



2. Mix all ingredients in a large bowl until well combined.



3. Spoon mixture into muffin cups, filling about ¾ full.



4. Bake for 20–25 minutes until golden brown and crispy on the edges.



5. Let cool slightly before removing from the pan.



6. Enjoy warm, either as a snack, side dish, or appetizer!
