Cheesy Sausage Egg Muffins


(Low-carb, protein-packed, and perfect for grab-and-go mornings!)


Ingredients:


1 lb breakfast sausage, cooked and crumbled


6 large eggs


½ cup heavy cream


1 cup shredded cheddar cheese (plus extra for topping)


½ cup shredded mozzarella cheese


½ tsp salt


½ tsp black pepper


½ tsp garlic powder


½ tsp onion powder



Instructions:


1. Preheat oven to 375°F (190°C). Grease or line a muffin tin.



2. Cook the sausage in a skillet over medium heat until browned. Drain excess grease.



3. Whisk eggs, heavy cream, salt, pepper, garlic powder, and onion powder in a bowl.



4. Stir in the cooked sausage, cheddar cheese, and mozzarella cheese.



5. Spoon the mixture evenly into the muffin cups, filling about ¾ full.



6. Top with extra shredded cheese.



7. Bake for 18-20 minutes, or until set and golden on top.



8. Cool for a few minutes before removing. Enjoy warm or refrigerate for up to 5 days.
