Ingredients:
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 packet (or homemade) taco seasoning
1 can (10 oz) diced tomatoes with green chilies (drained)
3 cups frozen diced potatoes (or fresh, peeled and diced)
1 cup shredded cheddar cheese
½ cup shredded Monterey Jack cheese
½ cup beef broth
½ cup sour cream (optional, for serving)
Green onions or cilantro, for garnish
Instructions:
1. Brown the beef: In a skillet over medium heat, cook ground beef and onion until beef is browned. Drain excess grease, then stir in garlic and taco seasoning.
2. Assemble in the crockpot: Add cooked beef mixture, diced tomatoes, potatoes, and beef broth. Stir well to combine.
3. Cook: Cover and cook on low for 5-6 hours or high for 3-4 hours, until potatoes are tender.
4. Add cheese: Sprinkle shredded cheeses over the casserole. Cover and let it melt (about 10 minutes).
5. Serve: Garnish with green onions or cilantro. Serve with sour cream if desired.
