Crockpot French Onion Meatloaf with Melted Swiss Cheese
Ingredients:
2 lbs ground beef (80/20 for best flavor)
1 packet (1 oz) dry French onion soup mix
1/2 cup crushed pork rinds (or almond flour for low-carb)
1/4 cup heavy cream
1/4 cup Worcestershire sauce
2 eggs, beaten
1/2 tsp garlic powder
1/2 tsp black pepper
1 cup shredded Swiss cheese (plus extra slices for topping)
1 tbsp butter
1 large onion, thinly sliced
1/2 cup beef broth
Instructions:
1. Caramelize the onions: In a pan, melt butter over medium heat. Add sliced onions and cook for 10–15 minutes until golden and soft. Deglaze with a little beef broth if needed. Set aside.
2. Make the meatloaf mixture: In a large bowl, mix ground beef, French onion soup mix, crushed pork rinds, heavy cream, Worcestershire sauce, eggs, garlic powder, black pepper, and shredded Swiss cheese.
3. Form and cook: Shape into a loaf and place in the crockpot. Pour beef broth around the sides and top with caramelized onions.
4. Slow cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until fully cooked (160°F internal temp).
5. Melt the cheese: In the last 15 minutes, lay Swiss cheese slices over the top and cover until melted.
6. Serve: Let rest for 5–10 minutes before slicing. Serve with mashed cauliflower or roasted veggies.
