Deliciously Simple Mediterranean Salad
(Sugar-free, light, and packed with flavor)
Ingredients (Serves 2-3)
2 cups mixed greens (spinach, arugula, or romaine)
½ cup cherry tomatoes, halved
⅓ cup cucumber, diced
¼ cup Kalamata olives, sliced
¼ cup feta cheese, crumbled
¼ cup red onion, thinly sliced
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice (or red wine vinegar)
½ teaspoon dried oregano
¼ teaspoon garlic powder
Salt & black pepper to taste
Instructions
1. Prepare the veggies: Wash and chop the greens, tomatoes, cucumber, olives, and onion.
2. Assemble the salad: In a large bowl, combine all the veggies and feta cheese.
3. Make the dressing: In a small bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and black pepper.
4. Toss & serve: Drizzle the dressing over the salad, toss gently, and serve immediately.
Optional Additions
Add grilled chicken, shrimp, or chickpeas for protein.
Sprinkle with toasted almonds or sunflower seeds for crunch.
Swap feta for goat cheese or parmesan for a different flavor.
