Egg rolls in a bowl

 











Ingredients:


1 lb ground pork (or turkey, beef, or chicken)


1 tbsp sesame oil


½ onion, diced


2 cloves garlic, minced


1 tbsp fresh ginger, minced (or 1 tsp ground ginger)


1 bag (14 oz) coleslaw mix (or shredded cabbage and carrots)


3 tbsp soy sauce (or coconut aminos for a sugar-free option)


1 tsp rice vinegar


½ tsp red pepper flakes (optional)


2 green onions, sliced


1 tsp toasted sesame seeds (optional)



Instructions:


1. Heat sesame oil in a large skillet over medium-high heat. Add the ground pork and cook until browned, breaking it apart as it cooks.



2. Add diced onion, garlic, and ginger, stirring for about 2 minutes until fragrant.



3. Stir in the coleslaw mix and cook for 5–7 minutes, until softened but still slightly crunchy.



4. Add soy sauce, rice vinegar, and red pepper flakes. Stir well to combine and cook for another 2 minutes.



5. Remove from heat and top with green onions and sesame seeds.




Serving Suggestions:


Enjoy as-is for a low-carb meal.


Serve over cauliflower rice or regular rice if desired.


Add a fried egg on top for extra richness.
