Flourless, Sugar-Free, Vegan Carrot Cake
Ingredients:
2 cups grated carrots
1 cup almond flour (or ground oats)
1/2 cup unsweetened applesauce (adds moisture)
1/2 cup chopped walnuts or pecans (optional)
1/2 cup dates or raisins, finely chopped (for natural sweetness)
1/2 cup unsweetened coconut flakes (optional)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking soda
1 teaspoon apple cider vinegar (helps it rise)
1/2 cup plant-based milk (almond, oat, or coconut)
Instructions:
1. Preheat oven to 350°F (175°C) and line a small cake pan with parchment paper.
2. Mix dry ingredients: Combine almond flour, cinnamon, nutmeg, baking soda, and nuts in a bowl.
3. Prepare wet mixture: Blend applesauce, plant-based milk, and dates/raisins until smooth. Stir in grated carrots.
4. Combine: Mix wet and dry ingredients together until well incorporated. Let sit for 5 minutes.
5. Bake: Pour into the cake pan and bake for 30-35 minutes or until a toothpick comes out clean.
6. Cool & Enjoy: Let it cool before slicing. Serve as is, or top with a sugar-free cashew or coconut cream frosting!
