Ingredients
8 oz pasta (penne, rotini, or bowtie)
1 cup cherry tomatoes, halved
1 cup cucumber, diced
½ cup red bell pepper, diced
¼ cup red onion, finely chopped
½ cup black olives, sliced
¼ cup fresh basil, chopped
½ cup feta cheese (or mozzarella pearls)
¼ cup olive oil
2 tbsp lemon juice (or red wine vinegar)
1 tsp Dijon mustard
1 garlic clove, minced
½ tsp dried oregano
Salt & pepper to taste
Instructions
1. Cook pasta according to package directions. Drain and rinse with cold water.
2. In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, basil, and feta cheese.
3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic, oregano, salt, and pepper.
4. Pour the dressing over the salad and toss well to combine.
5. Let it chill in the fridge for at least 30 minutes before serving for the best flavor.
