Ingredients:
For the Chicken Marinade:
1 lb (450g) boneless, skinless chicken thighs or breasts
3 tbsp olive oil
2 tbsp lemon juice
2 garlic cloves, minced
1 tbsp dried oregano
1 tsp paprika
½ tsp ground cumin
Salt & pepper to taste
For the Tzatziki Sauce:
1 cup plain Greek yogurt
1 tbsp lemon juice
1 tbsp olive oil
1 cucumber, grated and excess water squeezed out
2 garlic cloves, minced
1 tbsp fresh dill, chopped (or 1 tsp dried)
Salt & pepper to taste
For the Gyros:
4 pita bread or flatbreads
Sliced tomatoes
Sliced red onion
Sliced cucumber
Fresh parsley (optional)
Instructions:
1. Marinate the Chicken: In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add the chicken and toss to coat. Cover and marinate in the fridge for at least 30 minutes, preferably a few hours.
2. Make Tzatziki Sauce: In a bowl, mix Greek yogurt, lemon juice, olive oil, grated cucumber, garlic, dill, salt, and pepper. Refrigerate while you prepare the chicken.
3. Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook the chicken for 5-7 minutes per side until fully cooked and slightly charred. Remove and let rest before slicing.
4. Assemble Gyros: Warm the pita bread. Layer with sliced chicken, tomatoes, red onion, cucumber, and a generous dollop of tzatziki sauce.
5. Serve & Enjoy: Garnish with fresh parsley, roll up, and serve immediately!
