Greek Chicken Meatballs
Ingredients:
1 lb ground chicken
1/2 cup breadcrumbs (or almond flour for gluten-free)
1 egg
2 cloves garlic, minced
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1 tsp dried oregano
1 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
Zest of 1 lemon
2 tbsp olive oil (for cooking)
Instructions:
1. Mix the Meatballs – In a large bowl, combine all ingredients (except olive oil) and mix until just combined. Do not overmix.
2. Form the Meatballs – Roll the mixture into 1-inch meatballs and place them on a plate.
3. Cook the Meatballs – Heat olive oil in a skillet over medium heat. Cook the meatballs for about 4-5 minutes per side until golden brown and cooked through (internal temp: 165°F). Alternatively, bake at 400°F for 18-20 minutes.
4. Rest & Serve – Let the meatballs rest for a couple of minutes before serving with tzatziki.

Homemade Tzatziki
Ingredients:
1 cup Greek yogurt (plain, full-fat preferred)
1/2 cucumber, grated and squeezed to remove excess water
1 tbsp lemon juice
1 tbsp olive oil
1 clove garlic, minced
1 tbsp fresh dill, chopped (or 1 tsp dried dill)
1/2 tsp salt
1/4 tsp black pepper
Instructions:
1. Prepare the Cucumber – Grate the cucumber and squeeze out excess water with a towel.
2. Mix Everything – In a bowl, combine all ingredients and mix well.
3. Chill – Let it sit in the fridge for at least 20 minutes for flavors to meld.
Serve the Greek chicken meatballs with tzatziki, warm pita, and a side of Greek salad or rice!
