Grilled Chicken Salad


Ingredients:


For the chicken:


2 boneless, skinless chicken breasts


2 tbsp olive oil


1 tsp garlic powder


1 tsp onion powder


½ tsp smoked paprika


½ tsp salt


¼ tsp black pepper


Juice of ½ lemon



For the salad:


4 cups mixed greens (romaine, spinach, or arugula)


½ cup cherry tomatoes, halved


½ cucumber, sliced


¼ red onion, thinly sliced


½ avocado, sliced


¼ cup feta cheese (optional)


¼ cup roasted almonds or pecans



For the dressing:


3 tbsp olive oil


1 tbsp apple cider vinegar or lemon juice


1 tsp Dijon mustard


½ tsp garlic powder


¼ tsp salt


¼ tsp black pepper



Instructions:


1. Marinate the chicken: In a bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, pepper, and lemon juice. Coat the chicken and let it marinate for at least 15 minutes (or up to 2 hours in the fridge).



2. Grill the chicken: Preheat a grill or grill pan over medium-high heat. Cook the chicken for 5-7 minutes per side until fully cooked (165°F internal temperature). Let it rest for a few minutes, then slice.



3. Prepare the salad: In a large bowl, toss mixed greens, tomatoes, cucumber, red onion, avocado, and nuts.



4. Make the dressing: Whisk together all dressing ingredients.



5. Assemble: Place sliced grilled chicken on top of the salad. Drizzle with dressing and sprinkle with feta cheese if using.



6. Serve immediately!
