Ingredients:
2 cups cooked chicken, shredded or diced
½ cup mayonnaise (or Greek yogurt for a lighter version)
1 tsp Dijon mustard
½ cup pineapple chunks (fresh or canned, drained)
¼ cup celery, diced
¼ cup red bell pepper, diced
¼ cup macadamia nuts or slivered almonds, toasted
2 tbsp red onion, finely diced
1 tbsp lime juice
½ tsp salt
¼ tsp black pepper
¼ tsp garlic powder
2 tbsp shredded coconut (optional, unsweetened)
Instructions:
1. In a large bowl, combine the chicken, mayonnaise, and Dijon mustard.
2. Stir in pineapple, celery, bell pepper, nuts, and red onion.
3. Add lime juice, salt, pepper, and garlic powder. Mix well.
4. Sprinkle with shredded coconut if using.
5. Chill for at least 30 minutes before serving.
