Ingredients:
1 box lemon cake mix
1 (21 oz) can lemon pie filling
8 oz cream cheese, softened
½ cup granulated sweetener (or sugar substitute)
½ cup unsalted butter, melted
1 teaspoon vanilla extract
½ teaspoon lemon zest (optional)
Instructions:
1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
2. Spread the lemon pie filling evenly at the bottom of the dish.
3. In a bowl, mix softened cream cheese, sweetener, and vanilla extract until smooth. Drop spoonfuls over the pie filling.
4. Sprinkle the dry lemon cake mix evenly over the top.
5. Drizzle melted butter over the cake mix, making sure to cover as much as possible.
6. Bake for 35-40 minutes or until the top is golden brown and bubbly.
7. Let it cool slightly before serving.
