Healthy Oat, Apple & Raisin Cake
Ingredients:
1 ½ cups rolled oats (blended into flour or left whole)
1 cup unsweetened applesauce (or 2 grated apples)
½ cup raisins (or chopped dates for natural sweetness)
2 eggs (or flax eggs for vegan)
½ cup unsweetened almond milk (or any milk)
1 tsp vanilla extract
1 tsp cinnamon
½ tsp baking soda
½ tsp baking powder
¼ tsp salt
2 tbsp coconut oil or melted butter (optional for moisture)
Optional: 1–2 tbsp honey or monk fruit sweetener (if you like it sweeter)
Instructions:
1. Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
2. Mix oats, cinnamon, baking soda, baking powder, and salt in a bowl.
3. In another bowl, whisk eggs, applesauce, vanilla, and almond milk until smooth.
4. Combine wet and dry ingredients, then fold in raisins.
5. Pour into the pan and bake for 30–35 minutes until golden and a toothpick comes out clean.
6. Cool completely before slicing. Enjoy!
