Mashed Potato Puffs
Servings: 12 puffs
Ingredients:
2 cups mashed potatoes (cold leftovers work best)
2 large eggs
½ cup shredded cheese (cheddar, parmesan, or your favorite)
¼ cup milk (or heavy cream for richer puffs)
¼ cup green onions or chives, chopped (optional)
¼ tsp garlic powder
¼ tsp salt (adjust based on mashed potatoes' seasoning)
¼ tsp black pepper
½ cup cooked, crumbled bacon (optional)
Butter or cooking spray (for greasing the muffin tin)
Instructions:
1. Preheat Oven: Set to 400°F (200°C). Grease a muffin tin with butter or cooking spray.
2. Mix Ingredients: In a bowl, combine mashed potatoes, eggs, cheese, milk, green onions, garlic powder, salt, and pepper. Stir until well mixed.
3. Fill Muffin Tin: Spoon the mixture into the muffin cups, filling each about ¾ full.
4. Bake: Bake for 20-25 minutes, or until the tops are golden and crispy.
5. Cool & Serve: Let them cool slightly before removing from the tin. Serve warm, with sour cream or your favorite dipping sauce.
