Saucy Beef & Bean Burritos
Ingredients
1 lb ground beef (or shredded chicken)
1 small onion, diced
2 cloves garlic, minced
1 cup tomato sauce
½ cup beef broth (or water)
1 tbsp taco seasoning
½ tsp cumin
½ tsp smoked paprika
1 (15 oz) can refried beans (or black beans, mashed)
1 cup shredded cheese (cheddar or Mexican blend)
4 large flour tortillas
½ cup sour cream (for extra moisture inside, optional)
½ cup enchilada sauce (for drizzling, optional)
Instructions
1. Cook the Filling: In a skillet over medium heat, sauté onions until soft, then add garlic and ground beef. Cook until browned. Drain excess grease.
2. Add Sauce & Beans: Stir in tomato sauce, broth, taco seasoning, cumin, and smoked paprika. Let simmer for 5 minutes. Mix in refried beans for a creamy, moist texture.
3. Assemble the Burritos: Spread a little sour cream on each tortilla. Add a scoop of the beef mixture and sprinkle with cheese.
4. Wrap & Toast: Fold the sides in, roll tightly, and place seam-side down in a hot skillet. Toast for 1-2 minutes per side for a crispy exterior.
5. Extra Moist Option: Drizzle with enchilada sauce before serving. Serve with extra sour cream or guacamole.
