Mushroom Sandwich Melts

 








Ingredients:


2 tbsp butter (or olive oil)


8 oz mushrooms, sliced (cremini or button work well)


1 small onion, thinly sliced


1 clove garlic, minced


½ tsp dried thyme (or 1 tsp fresh)


Salt and pepper to taste


4 slices whole grain or sourdough bread


1 tbsp Dijon mustard (optional, for extra flavor)


½ cup shredded cheese (Swiss, cheddar, or provolone)


2 tbsp mayonnaise or butter (for spreading on bread)



Instructions:


1. Sauté the mushrooms: Heat butter or oil in a pan over medium heat. Add mushrooms and onions, cooking until softened and golden brown (about 6-8 minutes). Stir in garlic, thyme, salt, and pepper. Cook for another minute, then remove from heat.



2. Assemble the sandwiches: Spread Dijon mustard on one side of two bread slices (if using). Top with sautéed mushrooms and sprinkle cheese evenly. Place the remaining bread slices on top.



3. Grill the sandwiches: Spread a thin layer of mayonnaise or butter on the outer sides of the bread. Heat a skillet over medium heat and cook sandwiches for 2-3 minutes per side, until golden brown and the cheese is melted.



4. Serve hot! Enjoy with a side of soup or salad.
