No-Bake Sugar-Free Chocolate Biscuit Cake
Ingredients:
200g sugar-free biscuits (like digestive or tea biscuits)
½ cup unsweetened cocoa powder
½ cup heavy cream (or coconut cream for dairy-free)
¼ cup butter (unsalted)
⅓ cup sugar-free chocolate chips (or chopped dark chocolate, 85% or higher)
2 tbsp monk fruit sweetener (or erythritol/stevia mix)
1 tsp vanilla extract
Instructions:
1. Break the biscuits into small pieces and place them in a mixing bowl.
2. Melt the chocolate mixture: In a saucepan over low heat, melt butter, heavy cream, cocoa powder, and sweetener, stirring until smooth. Remove from heat and stir in vanilla.
3. Combine: Pour the chocolate mixture over the biscuits and mix until all pieces are coated.
4. Shape & Chill: Transfer the mixture into a lined loaf pan or cake mold. Press down firmly.
5. Refrigerate for at least 3-4 hours, or until set.
6. Slice & Serve! Enjoy cold, like a rich chocolate fudge cake.
