Instructions:
1. In a bowl, whisk the eggs, then add melted butter (or coconut oil), vanilla extract, and sweetener.
2. Stir in the shredded coconut, coconut flour, baking powder, and coconut milk until well combined.
3. Pour the batter into a greased microwave-safe mug or ramekin.
4. Microwave for 90 seconds to 2 minutes, depending on your microwave’s power.
