Orange Dreamsicle Salad

 









Sugar-Free Orange Dreamsicle Salad


Ingredients:


1 box (0.3 oz) sugar-free orange gelatin


1 box (1 oz) sugar-free vanilla pudding mix (instant)


1 cup boiling water


½ cup cold water


1 cup heavy whipping cream (or sugar-free whipped topping)


1 cup cottage cheese (optional for extra creaminess)


1 can (11 oz) mandarin oranges, drained


1 cup unsweetened shredded coconut (optional)


½ cup chopped pecans or walnuts (optional)



Instructions:


1. Dissolve the orange gelatin in boiling water, then stir in cold water. Let cool slightly but not fully set.



2. Whisk in the vanilla pudding mix until smooth. Let sit for 5 minutes to thicken.



3. Whip the heavy cream (if using) until stiff peaks form, then fold into the gelatin mixture.



4. Fold in the cottage cheese, mandarin oranges, coconut, and nuts until well combined.



5. Chill for at least 2 hours before serving to allow flavors to meld.




Serving Tip: Top with extra whipped cream and a few mandarin orange slices for a pretty presentation!
