Potatoes and Green Beans with Sausage
Ingredients:
1 lb smoked sausage (kielbasa or andouille), sliced
4 medium potatoes, diced
2 cups fresh or frozen green beans
1 small onion, chopped
3 cloves garlic, minced
2 tbsp olive oil or butter
1 tsp smoked paprika
½ tsp garlic powder
½ tsp onion powder
Salt & pepper, to taste
½ cup chicken broth (optional, for extra flavor)
Instructions:
1. Cook the sausage – Heat a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove and set aside.
2. Sauté potatoes – In the same skillet, add olive oil (or butter) and diced potatoes. Cook for about 10-12 minutes, stirring occasionally, until they start to brown and soften.
3. Add onion and garlic – Stir in the chopped onion and minced garlic. Cook for 2-3 minutes until fragrant.
4. Cook green beans – Add the green beans, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir well.
5. Combine and finish – Return the sausage to the skillet, pour in the chicken broth (if using), cover, and let simmer for about 5-7 minutes, until everything is tender.
6. Serve and enjoy!
