Sugar-Free Roasted Potato Salad

This roasted potato salad is flavorful, creamy, and perfect for any meal—without any added sugar!

Ingredients:

  • 2 lbs baby potatoes (red or gold), halved
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika (optional)
  • 1/3 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar or lemon juice
  • 2 tbsp chopped fresh parsley
  • 2 green onions, sliced
  • 2 boiled eggs, chopped (optional)
  • 1/4 cup crispy bacon bits (optional)

Instructions:

  1. Roast the Potatoes:

    • Preheat oven to 425°F (220°C).
    • Toss potatoes with olive oil, salt, pepper, garlic powder, and paprika.
    • Spread on a baking sheet and roast for 25–30 minutes, flipping halfway, until golden and crispy.
  2. Prepare the Dressing:

    • In a large bowl, whisk together mayonnaise, Dijon mustard, and apple cider vinegar.
  3. Assemble the Salad:

    • Add the warm roasted potatoes to the bowl and toss to coat in the dressing.
    • Stir in parsley, green onions, and optional boiled eggs or bacon bits.
  4. Serve & Enjoy:

    • Serve warm or chilled. The flavors get even better after a few hours in the fridge!
