Sugar-Free Roasted Potato Salad
This roasted potato salad is flavorful, creamy, and perfect for any meal—without any added sugar!
Ingredients:
- 2 lbs baby potatoes (red or gold), halved
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika (optional)
- 1/3 cup mayonnaise (or Greek yogurt for a lighter version)
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar or lemon juice
- 2 tbsp chopped fresh parsley
- 2 green onions, sliced
- 2 boiled eggs, chopped (optional)
- 1/4 cup crispy bacon bits (optional)
Instructions:

Roast the Potatoes:
- Preheat oven to 425°F (220°C).
- Toss potatoes with olive oil, salt, pepper, garlic powder, and paprika.
- Spread on a baking sheet and roast for 25–30 minutes, flipping halfway, until golden and crispy.

Prepare the Dressing:
- In a large bowl, whisk together mayonnaise, Dijon mustard, and apple cider vinegar.

Assemble the Salad:
- Add the warm roasted potatoes to the bowl and toss to coat in the dressing.
- Stir in parsley, green onions, and optional boiled eggs or bacon bits.
