2 lbs boneless, skinless chicken breasts or thighs
1 cup low-sodium chicken broth
1 packet (1 oz) onion soup mix or ranch seasoning (for extra flavor)
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1 teaspoon paprika (optional)
8 oz cream cheese, softened (or use Greek yogurt for a lighter option)
1/2 cup heavy cream (or unsweetened almond milk for a lower-calorie version)
2 tablespoons cornstarch (optional, for thicker gravy)
Instructions:
1. Prep the Chicken: Place chicken in the slow cooker.
2. Add Seasoning: Sprinkle with onion soup mix, garlic powder, onion powder, black pepper, and paprika.
3. Pour in Broth: Add chicken broth to keep it moist.
4. Cook Low & Slow: Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
5. Shred & Mix: Shred the chicken with two forks. Add cream cheese and heavy cream, stirring until smooth.
6. Thicken (Optional): If you want a thicker gravy, mix 2 tablespoons cornstarch with 2 tablespoons water, then stir into the slow cooker. Let it cook for another 10-15 minutes until thickened.
